Another new Crave favourite! My vegetarian version of the smoked bacon ones are equally as delicious. Here is what you wil need:

 

  • 3 x halved peppers

  • Half an onion finely chopped

  • 1 mushroom finely chopped

  • 2 tablespoons petit pois & sweetcorn

  • 2 tablespoons lentils

  • 1 heaped tablespoon marinade

  • 1 heaped tablespoon Boursin

  • A little grated cheese (optional)

Heat the oven to 220 degrees then halve the peppers, remove the seeds then place in the oven for 15 to 20 minutes. Meanwhile, heat a non stick frying pan on medium & add the onion & cook for a few minutes then add the rest of the ingredients except the grated cheese, mix well then take off the heat.

 

When the peppers are slightly charred, leaving the oven on, remove the peppers from the oven & rest for a few minutes to release the steam (tip out any moisture from the pepper using tongs as they will be very hot).

 

Spoon the mixture into each pepper then return to the oven for a further 15 minutes, turn the grill on high & sprinkle each one with a little grated cheese & place under the grill for 5 minutes
