  • Sweet potatoes, cut into wedges

  • Olive oil

  • 1 tablespoon Marinade for one large potato

 

Pre-heat the oven to 220 degrees & cut sweet potatoes into wedges, coat in the olive oil, mix well then coat with Karen's Spicy Marinade.  Arrange in a single layer onto a lightly greased, foil lined baking tray or parchment paper & pop in the oven for 20-25 minutes turning half way.

 

Serve, stand back and wait for the empty plates! Delicious served with our amazing dip (one teaspoon of marinade to three teaspoons of your usual mayo, creme fraiche (or your vegan substitite).
