500g Cooked Pasta (I prefer wholewheat)
250g Mayonnaise (or your chosen substitute)
250g Sweet Chilli Sauce
2 Teaspoons Marinade or Spicy Chicken Residue
1 Red Onion Chopped
1 Red Pepper Sliced
1 Yellow Pepper Sliced
1 Green Pepper Sliced
100g Frozen Sweetcorn
100g Frozen Peas
Salt & Pepper
Mix everything together in a bowl then alter any of the ingredients to suit your taste i.e if you would like a spicier sauce, add more marinade. If you would like it a little more creamier, add more mayonnaise.
TIP: If making this in advance, add the mayo & sweet chilli before serving as the pasta can absorb these if kept in the fridge for a while before serving.
You can add any ingredients you like to this dish, lovely with fried mushrooms, chick peas, kidney beans etc & amazing with cooked Karen’s Spicy Chicken Fillet … experiment! I would love to hear how you’ve made yours.
