A delicious tomato based curry with green beans. Serve with rice, jacket, naan, chapatis or whatever you fancy! Garnish with fresh coriander if desired.
5 tablespoons olive oil
2 medium onions finely chopped
1 heaped tablespoon of tomato puree
4 tablespoons Karen’s Spicy Marinade
630g pack of chicken fillets (approx 4) diced
Pack of trimmed green beans cut into 3
Tin of chopped tomatoes
100ml Single Cream (optional)
McDougalls Thickening Granules (optional)
Heat the oil in pan/wok on medium & add onion. Cook for 5 minutes. Add tomato puree & Karen’s Spicy Marinade then mix through. Add the chicken & cook on a low-to-medium heat for 10 minutes. Add tinned tomatoes & green beans. Bring to the boil then stir well & simmer on low for 25 minutes ... delicious! If desired, at the end add the single cream & if you would like a thicker consistency, add the McDougalls granules (a little at a time). If you would like it spicier, add more marinade!
