  • 2 eggs

  • 1/4 to 1/2 tsp Karen's Spicy Marinade (to taste)

  • Small handful of finely chopped red pepper

  • Small handful offinely chopped spring onions

  • Handful of small cooked prawns

  • Handful of cooked new potatoes, shopped into small pieces

  • Chopped chives, to garnish

  • Salt and pepper

 

Mix eggs with marinade, then add pepper and spring onion, salt and pepper to taste.

 

Fry prawns in a little oil, salt and pepper until excess water evaporates (otherwise frittata will be soggy). Put to one side.

Prawn and Potato Frittata with Karen's Spicy Marinade

Saute the potatoes in a little oil. When warmed through and golden/crispy, add egg mixture and then spread prawns out on top.

 

Cook for a couple of minutes until cooked on the bottom, then put pan under pre-heated grill for 1-2 minutes until top is cooked.

 

Sprinkle with chopped chives and enjoy!
