1/4 to 1/2 tsp Karen's Spicy Marinade (to taste)
Small handful of finely chopped red pepper
Small handful offinely chopped spring onions
Handful of small cooked prawns
Handful of cooked new potatoes, shopped into small pieces
Chopped chives, to garnish
Salt and pepper
Mix eggs with marinade, then add pepper and spring onion, salt and pepper to taste.
Fry prawns in a little oil, salt and pepper until excess water evaporates (otherwise frittata will be soggy). Put to one side.
Saute the potatoes in a little oil. When warmed through and golden/crispy, add egg mixture and then spread prawns out on top.
Cook for a couple of minutes until cooked on the bottom, then put pan under pre-heated grill for 1-2 minutes until top is cooked.
Sprinkle with chopped chives and enjoy!
