I’m not going to lie ... this is most probably one of the nicest curries I have ever made. Melt in the mouth, delicious chicken. I used the Classic marinade variety but you can use any:

 

  • One onion cut into large chunks

  • 1kg skinless, boneless thighs

  • 400ml can of coconut milk

  • Heaped teaspoon chilli flakes

  • 4 tablespoons of marinade

  • Juice of one lime

  • 100g crunchy peanut butter

  • Chicken jelly stock cube

  • McDougalls thickening granules

  • Chillie flakes to garnish(optional)

  • Coriander to garnish (optional)

Put your slow cooker onto the low setting & add all the above ingredients (except the garnish), mix well & cook for four hours, stirring halfway.

 

At the end of the cooking time, thicken to your desired consistency (start with just a little) & serve on a bed of rice, garnish with fresh or dried chilli flakes & coriander ... amazing!
