A delicious dish, perfect for using up any turkey left over after Christmas!
1 tablespoon olive oil
1 medium onion, finely chopped
1 can of chopped tomatoes
Turkey breast or left-over Christmas turkey
3 tablespoons Karen’s Spicy Marinade
1 Chicken Stock Cube in half pint of water
Salt & pepper
200ml Single Cream
2 tablespoons tomato puree
Fresh coriander (optional)
Saute onion in the oil then add two tablespoons of Karen's Spicy Marinade, mix through then add the turkey and cook on a medium heat for a few minutes, add the tomatoes then stir-in the chicken stock. Mix together well and simmer for 10 minutes on a medium heat.
Add salt and black pepper to taste, then add the cream, tomato puree and coriander if desired. Stir through and taste. If you would like it a little spicier, add a further tablespoon of marinade.
Simmer for 20 minutes then serve with plain boiled rice and naan bread ... delicious!
