12 to 15 skinless drum & thigh pieces
One tub of Karen's Spicy Marinade
Fresh or dried parsley/coriander
Preheat oven to 220 degrees & place 12 to 15 skinless drum & thigh in a single layer into a roasting dish then place one pot of Karen's Spicy Marinade on top of the chicken & using a food glove or fork, mix into the chicken coating all surfaces.
Garnish with fresh/dried coriander or parsley & cook uncovered for 40 minutes, checking all pieces are cooked through & food is piping hot
TIP: Reserve any juice to flavour rice, pasta, jacket potatoes etc (can be frozen)
TIP: Finish off on the bbq too if desired!
