The ingredients listed here make enough filling for 20 party sized ones & you will need:

 

  • Half an onion finely chopped

  • One chicken fillet diced small

  • 100ml single cream

  • 2 teaspoons mild marinade

  • 4 medium mushrooms chopped

  • Splash of white wine (optional)

  • Heaped teaspoon of tomato purée

 

I have used our mild variety but you can of course use the spicy or spicy no added sugar one, all equally as delicious.

The vol au vents shown here are the party sized ones which are a little fiddly & I would suggest making double the amount you need as you can damage quite a lot in the process of making them or, you could use the usual sized ones which are a lot easier.

 

Heat a little olive oil in a pan & add the onion, cook for a couple of minutes then add the chicken fillet & cook for a further 4 minutes. Add the cream, marinade, tomato purée & wine if using & mix well ... then add the mushrooms & mix well.

 

Cook for a few minutes until thickened then season to taste ... garnish with a little coriander if desired ... amazing!
