This is delicious, spicy, low fat, quick, easy, low sugar & economical ... what more could you want! Here's the recipe, serves 4:
1 chopped onion
2 sticks celery sliced
3 chicken fillets in small cubes
Handful frozen peas
4 tablespoons marinade
2 packs cooked wholegrain rice
2 tablespoons dark soy sauce
Fry the onion & celery in a little fry light for a few minutes then add the chicken. Stir fry for 5 minutes then add the rest of the ingredients except the coriander. Cook through for a couple more minutes then cut through the thickest part of one of the chicken cubes to check if thoroughly cooked. If you think it's a little dry add more soy sauce.
Top with fresh coriander if desired.
